Hi-Country meat rubs are to gently impart flavors, influence the cooked color and even form a flavorful crust on the meat they are used on. Rubs, as the name suggests, are rubbed into the meat and if allowed to penetrate into the immediate surface of the meat, will cook into the meat to create a subtle flavor change as it melds with the natural juices of the meat. Meats can be pricked with a fork or a tenderizing tool to improve the penetration of the flavor, but length of time to allow natural flavor penetration is best. A minimum of one to two hours improves the rubs ability to bring out those subtle flavors.
